South Africa's first craft whisky distillery and one of the pioneers of African single malt. Founded by Moritz Kallmeyer, a microbiologist-turned-distiller, in Pretoria's Silverton neighborhood. Drayman's produces Solera-aged single malt using a distinctive process: the whisky is aged in a solera system of bourbon, wine, and port casks in a specially designed maturation warehouse. The Highveld climate (warm days, cool nights at 1,350m altitude) provides excellent temperature cycling for maturation. Drayman's Highveld Single Malt won Best African Whisky at the World Whiskies Awards. Kallmeyer also brews craft beer on-site, applying his microbiology expertise to yeast management. The distillery proves that Africa's whisky potential extends far beyond the established James Sedgwick/Three Ships operation in the Western Cape.
