In the rolling hills of Dumfries and Galloway, where Scotland softens toward the Solway Firth, the Galloway Distillery draws its breath from winds that have crossed ancient moorland and carved valleys. Here in Newton Stewart, the Lowlands reveal their quieter character—less dramatic than Highland peaks, yet no less purposeful in their whisky-making.

The distillery began life in 2015 as Crafty Distillery, when local entrepreneurs saw opportunity in these gentle hills where spring water runs clear and constant. For a decade, it found its footing in this corner of Scotland where whisky tradition runs deep but innovation finds room to breathe. The Lowlands have always been Scotland's gateway region—accessible, welcoming, yet fiercely protective of their craft.

October 2025 brought transformation. Sam Heughan, whose Outlander fame had already led him into whisky through Sassenach Spirits, partnered with Alexander Norouzi to acquire and rebrand the operation. What emerged was more than a celebrity venture—it was a commitment to place, powered by the same Galloway spring water that had always defined the distillery's character.

The water here tells its own story, filtered through granite and peat, carrying the mineral signature of hills that have watched over whisky-making for centuries. It feeds a facility capable of 200,000 liters per annum, a scale that speaks to serious ambition while remaining rooted in Lowland tradition.

Green energy powers the operation, with local winds that once turned grain mills now cooling the condensers. It's a choice that reflects both modern sensibility and ancient wisdom—using what the land provides. The distillery produces not just Galloway Scotch Whisky, but The Sassenach blend and Wild Scottish Gin, diversification that echoes the practical spirit of Lowland distilling.

Standing in this stillhouse, you feel the convergence of old and new Scotland. The copper still gleams under LED lights powered by Galloway winds, while spring water flows as it has for millennia. The whisky resting in oak carries the DNA of this place—the soft Lowland character, the mineral touch of local water, the patient wisdom of a region that has always understood that the best whisky comes not from rushing, but from letting the land speak through time.
