Ninkasi

Lyon-area brewery-distillery that began as a craft brewery in 1997 and added whisky production in 2015 with Charentais pot stills at their Tarare facility (a former dye works). Master distiller Alban Perret, trained at the Institute of Brewing & Distilling in Edinburgh, leads production. Whiskies are brewed, distilled, and matured on site, aged in French wine casks (Viognier, Cognac, Gamay, Chardonnay) selected for each expression. Major expansion in 2023 with two new Honore stills multiplied capacity tenfold. Produces the Ninalys whisky range alongside craft beer, vodka, and brandy.
