Thy Whisky

A farmhouse distillery in the windswept Thy region of northwestern Jutland, Denmark. Practices a complete field-to-bottle approach: grows its own barley (including heritage Danish varieties), floor-malts on site, and smokes malt using local heather and seaweed instead of peat. The terroir-driven philosophy mirrors the Nordic food movement's emphasis on local ingredients and provenance. Located in Denmark's first national park (Thy National Park), near the North Sea coast. Produces organic single malt with a distinctly Danish character.
