First whisky distillery in Kumamoto Prefecture. Completed November 2021, opened March 2022. Located at 980-1 Kaomachi Aizato, Yamaga City. Uses imported UK barley (primarily non-peated), mashed with local groundwater, fermented 96 hours in stainless steel washbacks. Spirit filled at 60% ABV into ex-Bourbon and ex-Sherry casks. First single malt released 2025 with technical cooperation from Hombo Shuzo. Inspired by Yamaga's famous Lantern Dance tradition.

November 2021 marked more than the completion of Kumamoto Prefecture's first whisky distillery. It was the moment when MCA Holdings, born from the regional Coca-Cola bottling empire, chose to honor their intimate knowledge of water with something far more patient than soft drinks. The timing was no accident—Japan's whisky renaissance had reached this southern island, where volcanic soil filters rainwater into something extraordinary.

The groundwater that rises beneath Yamaga carries the memory of Mount Aso's ancient eruptions, emerging with a mineral clarity that speaks to centuries of geological filtration. This same water that once drew samurai to healing baths now awakens imported British barley in stainless steel washbacks, where ninety-six hours of fermentation unfolds with the deliberate patience that defines Japanese craftsmanship.

The distillery's copper stills stand like sentinels in a space designed with monozukuri principles—every angle calculated, every surface purposeful. Scottish tradition flows through Japanese hands here, where spirit emerges at sixty percent and finds rest in ex-bourbon and ex-sherry casks. The marriage of Western cooperage with Kyushu's climate creates its own alchemy, wood breathing in rhythm with subtropical seasons.

Technical cooperation from Hombo Shuzo brings decades of Japanese whisky wisdom to this newest chapter, yet Yamaga writes its own story.
